Democratizing Access to High-Quality Food: The Use of Portable, Low-Cost Smart Sensors to Enhance Food Safety and Processing Efficiency in Brazil's Food Industry and Local Markets

Food safety is an important problem all over the world, especially in Brazil, because small-scale food industries lack access to low-cost, low-speed, and reliable quality control technologies. Therefore, this research proposes the development of an Online Portable Low-Cost E-Nose System (OPLCEN) aimed at the Brazilian food industry for enhancing food safety monitoring.
