With nearly 50 years of experience in research and teaching, he has helped shape modern understanding of carbohydrate nutrition and its impact on health and performance in both companion animals and humans.

Fiber plays a much bigger role in nutrition than most people realize. In this session, Dr. Fahey will break down how fiber is defined on food labels and what that actually means in practice. He will also explain how different types of fiber interact with the digestive system and why they are so important for gut function and overall diet formulation.
